Scope Of Work
Saxum Vineyards are focused on producing Rhone varietal blends from the Templeton Gap/Willow Creek area of Paso Robles, CA. The vineyard is sustainably farmed without chemical fertilizers, herbicides, or pesticides and rarely needs supplemental irrigation.
Saxum’s James Berry Vineyard was awarded #1 wine of 2010 by Wine Spectator, the industry’s highest honor.
Drawing from the minimalist approach that Saxum takes in the cellar, the new winery was designed to be completely subterranean, housing crushing, fermenting and barrel storage caves. This design minimizes the facility’s presence in the vineyard and in the vinicity of a neighboring residence. Floating outside between the two working portals, a green-roofed, steel-framed pavilion houses lounge space, private offices, a lab/kitchen, and restrooms connecting the caves to the vineyard.
